Pumpkin Foam Soup Recipe

Creamy and comforting, this pumpkin foam soup is a seasonal delight. Quick to make and perfect for warming up on chilly days!

Step 1
Sauté shallots and garlic in clarified butter. Deglaze with vegetable stock and add pumpkin puree, then blend until smooth.

Step 2
Stir in whipping cream and season, then strain through the Mosa Funnel & Sieve into a 0.5 L Mosa Whipper. Attach one Mosa Professional Charger and shake vigorously.

Step 3
Keep warm at max. 75°C in a bain-marie.
