Step 1Cook broccoli in vegetable stock until soft, then blend until smooth. Season with salt, pepper, and cayenne, then add whipping cream.
Step 2Pour through the Mosa Funnel & Sieve into a 0.5 L Mosa Whipper, attach one Mosa Professional Charger, and shake vigorously.
Step 3Keep the Whipper warm at a maximum of 75°C in a bain-marie.
Caution: Avoid placing the Mosa Thermo Whip in the bain-marie.
