Sauté shallots and garlic in clarified butter. Deglaze with vegetable stock and add pumpkin puree, then blend until smooth.

Stir in whipping cream and season, then strain through the Mosa Funnel & Sieve into a 0.5 L Mosa Whipper. Attach one Mosa Professional Charger and shake vigorously.
Step 3
Keep warm at max. 75°C in a bain-marie.
